Trahana Soup With Feta Cheese
Traditional Greek Trahana soup is a really tasty, comfort food cooked in less than 30 minutes. Nice and thick with plenty of feta cheese melted inside!

In a medium-sized cooking pot bring to a boil over high heat, 5 cups of water (1250 ml), and the stock.
Once it starts to boil, add the olive oil and the Trahana.
Drop heat to medium-low and cook the Trahana for about 15 to 20 minutes. During that time keep an eye on the pot and stir very often with a wooden spoon. As the Trahana will start to thicken you will need to stir almost constantly so it won't stick at the bottom of the pot.
After 15-20 minutes Trahana is going to look like a really thick soup. At this point stir in the feta cheese and cook for 1-2 minutes more. Turn the heat off and taste to see if it needs any additional salt. As the feta cheese is very salty on its own.
Serve Trahana right away while it's still hot from the pot. It gets thicker the more it sits. You can always add a splash of hot water if it turns out too thick.
Serve with plenty of freshly ground pepper on top. And some extra crumbled feta as well if you like.
