Fried Green Peppers With Vinegar
Pan-Fried Green Peppers in olive oil and vinegar is a speedy and very tasty, traditional Greek appetizer.

- olive oil
- 500 grams (about 6 medium-sized) sweet green peppers (you may also use red peppers)
- 50 ml red wine vinegar
- OPTIONAL: hot red peppers flakes to serve with
Rinse the peppers and prick them a couple of times with a fork on each side. Pat them dry with paper towels.
Heat a generous splash of olive oil one that covers the whole bottom of a frying pan, over medium-high heat.
Add the peppers and fry them, turning them every minute or so. In order to get an even light brown color all over. If your stove is too strong you may want to drop the temperature to medium as the oil may pop a lot when you add the peppers.
Once the peppers get an even color all around, pour in the vinegar and drop the heat to a medium-low. Cook for 2-3 minutes more and then remove from heat and serve.
You can also add the oil from the pan and serve it over the peppers along with some extra raw olive oil on top. And if you prefer the peppers a bit more sourish serve with an extra drizzle of vinegar as well. OPTIONAL: You may serve with some hot red pepper flakes on top as well.
