Ingredients

  • 240 grams (1 cup) strained Greek yogurt
  • 1 tablespoon fresh dill finely chopped
  • ¼ lemon zest
  • 2 tablespoons lemon juice
  • 4 tablespoons extra virgin olive oil
  • 50 grams (½ small) red onion minced
  • 4 garlic cloves sliced
  • 25 grams (½ medium-sized) spring onion mostly the green part finely chopped
  • 350 grams fresh spinach leaves or frozen thawed spinach

Instructions

  • Heat olive oil in a non-stick or saute pan over moderate heat.
  • Saute red onion until soft.
  • Add spring onions and garlic and cook until golden and caramelized.
  • Add the spinach in batches. Season with salt. Cook until wilted. Take the pan off the heat.
  • Stir in the Greek yogurt, lemon juice, lemon zest, and dill.
  • Serve with freshly ground pepper on top.
