- 240 grams (1 cup) strained Greek yogurt
- 1 tablespoon fresh dill finely chopped
- ¼ lemon zest
- 2 tablespoons lemon juice
- 4 tablespoons extra virgin olive oil
- 50 grams (½ small) red onion minced
- 4 garlic cloves sliced
- 25 grams (½ medium-sized) spring onion mostly the green part finely chopped
- 350 grams fresh spinach leaves or frozen thawed spinach
Heat olive oil in a non-stick or saute pan over moderate heat.
Saute red onion until soft.
Add spring onions and garlic and cook until golden and caramelized.
Add the spinach in batches. Season with salt. Cook until wilted. Take the pan off the heat.
Stir in the Greek yogurt, lemon juice, lemon zest, and dill.
Serve with freshly ground pepper on top.
