The Texture
Crispy on top, soft in the middle, and tender underneath. There is a little trick that gives this chicken filo pie its special texture.
Instead of simply brushing the filo with butter, you combine milk and eggs with a little melted butter. You drizzle this mixture between the filo layers and on the top, then bake the pie.
The custard sinks into the pastry as it cooks and softens it. At the same time, the exposed filo becomes crisp, golden, and puffy. I use the same technique in my Ground Meat Pie Recipe and Egg Cheese Pie. Once you try it, you'll love it too!

The Filling
The chicken stays tender because you gently steam it before adding it to the filling. The mushrooms cook in a pan until their extra moisture is gone. This gives them a deep, savory flavor and helps keep the filo crisp.
Seasoning includes thyme, which adds a fresh herbal note. Ground fennel seeds bring a warm, slightly sweet flavor. A small amount of nutmeg adds warmth without taking over.
Then comes the cheese. A combination of hard, ripened Kefalotyri cheese and semi-hard yellow melting cheese such as Gruyère or Kaserri. Cheese substitutes you can see below.

Cooking The Chicken
Gently steaming the chicken is a simple way to keep it moist.
You do not need to brown it first. The chicken will get plenty of flavor from the mushroom filling, cheese, herbs, and spices.
Once cooked, chop or tear the chicken into small pieces.
Preparing The Mushrooms
Mushrooms contain a lot of water. If you add them to the pie before cooking them down, that moisture can make the filling watery and the filo soft. Instead, chop or coarsely dice the mushrooms and cook them in a wide pan.
Let them release their moisture. Keep cooking until the pan looks almost dry and the mushrooms begin to brown.
Then add the thyme, ground fennel seeds, and nutmeg. The mushrooms will take on a much deeper flavor.

What Cheese Works Best?
There is plenty of room to change the cheese in this pie. You can mix two cheeses. Try a mild melting cheese with a smaller amount of a stronger cheese for extra flavor.
Yellow Melting Cheese To Use:
- Gruyère gives you a rich, nutty flavor and melts beautifully.
- Kaserri is milder, allowing the other flavors to shine, and melts beautifully, giving a stringy texture.
- Regato is also a flavorful yellow cheese to use here.
- Gouda or Edam makes the filling mild and creamy.
- Cheddar gives the pie a stronger, more familiar cheese flavor.
Hard Ripe Cheeses To Use In Combination:
- Kefalotyri adds a salty, savory character that works very well with the mushrooms.
- Pecorino or Parmesan cheese are also sharp and salty.
- Romano cheese is another good option.

TIPS
- For the best filo texture, assemble and bake the pie when you are ready to eat it.
- To make this dish easier for a dinner party. Prepare the filling ahead, then deal with the filo shortly before baking.
- To stop the filo from becoming soggy, cook the mushrooms until most of their moisture has gone. Cook the pie long enough to absorb the custard properly. Bake on the lower rack to help the bottom phyllo cook well.
- Do not worry about making the filo neat. In fact, loose folds and crinkles are better. They create little pockets that puff in the oven.
- A short rest after baking also helps the pie settle before you cut it.
Can I Add Vegetables?
Absolutely. Spinach would be a natural addition. If fresh, cook it first and squeeze out as much moisture as possible. If frozen, thaw and squeeze well; no need to cook it.
Peas and broccoli work well here too. You can add peas and broccoli as is without cooking them first; however, keep them in small amounts.
Leeks would also work well with the chicken and mushrooms. Cook them slowly along with the onions until soft.
Try not to add too many vegetables at once. Keep the chicken and mushroom combination as the main flavor.

Make It Vegetarian
Leave out the chicken and increase the mushrooms. You could also add spinach, leeks, or broccoli. Keep the filling fairly dry so the filo stays crisp.
A mushroom, spinach, and cheese version would have the same soft middle and crunchy filo topping.

Chicken Mushroom Pie
Ingredients
- 450 grams (1 package) filo pastry
- 500 grams (1.1 pounds) chicken breasts boneless, skinless
- 120 grams (1 large) onion minced
- 500 grams (1.1 pounds) mushrooms white button, brown, portobello
- 1 teaspoon dried thyme or minced fresh
- ½ teaspoon ground fennel seeds
- ⅓ teaspoon ground nutmeg
- 450 ml milk at room temperature
- 3 large eggs lightly beaten
- 40 grams (3 tablespoons) butter melted
- 6 tablespoons olive oil + extra splash for sauteing
- 60 grams (½ cup) grated Kefalotyri cheese or Romano, Pecorino, Parmesan
- 125 grams (1½ cup) grated Gruyere or Greek Kaserri cheese or other semi-hard yellow cheese that melts
Instructions
- Thaw filo pastry in the fridge overnight. Then let it sit at room temperature for 30 minutes before working, without removing it from its package.
- Cook the chicken. Add a splash of water to a small cooking pot, just enough to cover the bottom of the pot. Add the chicken, season with salt, and steam-cook, covered, on low heat for 20-25 minutes. If you have a steam cooker you can use that.
- Rest the chicken until it's cool enough to handle.
- Preheat oven to 180°C / 350°F.
- Heat a splash of olive oil in a frying pan.
- Saute onion over moderate heat until completely soft and translucent.
- Coarsely dice the mushrooms and add them to the pan. Turn the heat to high and season with salt and pepper.
- Cook the mushrooms until they soften and start to sizzle in the pan. Take the pan off the heat.
- Stir in the thyme, ground fennel, and nutmeg.
- Chop the chicken finely and mix it into the mushrooms.
- Combine milk, eggs, and melted butter in a bowl, season with salt and pepper, and set aside.
- Lay open the filo stack on a clean working surface and cover it with a tea towel so it won't air-dry while you work.
- Brush a 23 x 33 cm (9 x 13-inch) pan with olive oil. Don't use a thick-bottomed baking dish for this recipe because the filo won't bake properly at the bottom.
- Add 6 filo sheets to the bottom, crosswise, covering the bottom of the pan and leaving half of each filo sheet hanging out of the pan on each side. Lightly drizzle each filo you add with olive oil.
- Spread half of the chicken-and-mushroom filling.
- Ladle 3 spoonfuls of the milk mixture on top.
- Sprinkle half of each cheese on top.
- Add one filo folded in half (it should fit inside the pan this way), sprinkle lightly/brush with olive oil. Repeat with another filo.
- Spread the remaining filling on top. Add 3 more spoonfuls (using a ladle) of the milk mixture and sprinkle the remaining cheese on top.
- Top with 4 more folded filo sheets, brushing or sprinkling lightly with olive oil on top.
- Overlap and fold the bottom filo that hangs out of the pan. Brush with olive oil.
- Cut the pie on top and all the way through to the middle (don't cut the bottom filos) and divide it into 10 pieces.
- Pour the remaining milk mixture on top.
- Bake for approximately 45 minutes on the lower rack of the oven until golden-brown and crispy. If it looks puffy while it bakes, cut the top with a knife to help release steam.
- Cool the chicken and mushroom pie for at least 20-30 minutes before cutting and serving.
- Cut into 10 large individual pieces or into smaller ones.
