This Crustless Cheese Pie is a simple no-phyllo version of a Greek Tiropita. Made with feta cheese, Greek yogurt, and sourmilk (or buttermilk) for a tangy, salty kick. Plus, plenty of olive oil and sesame seeds on top and bottom for a nutty, toasted flavor and crunchy, lightly crisp texture!

This Crustless Tiropita is very simple and quick to make. It's a delicious snack, breakfast, or side dish to enjoy with a Greek salad for a light lunch or dinner.

Texture and Flavor
The texture of this pie is soft, like a custardy cornbread with a slightly tangy flavor. It's one of a kind, and it's not dense or chewy. The sesame seeds add a slight crunch to this Tiropita and go perfectly well with the feta cheese, take for example Sesame Coated Fried Feta or this even better Phyllo Wrapped Feta with Sesame.

Ingredients
- Greek yogurt: I'm using strained full-fat Greek yogurt.
- Sour milk: Or you can use Buttermilk. We don't actually have Buttermilk in Greece; it's sour milk (Ksinogalo) that we use, but it's very similar and can be seamlessly substituted with Buttermilk.
- Olive oil: It doesn't have to be extra virgin for this recipe. A light olive oil works better as it won't make the pie too dense. Moreover, you can use a vegetable oil such as sunflower or even corn oil for an even lighter texture.
- Eggs
- All-purpose flour: Or use Gluten-free all-purpose flour in a 1:1 ratio.
- Corn flour: also called Maize flour. It's a yellow flour, not corn starch.
- Baking Powder
- Feta Cheese: Preferably a ripe, hard feta cheese in coarse crumbles so it won't melt completely into the batter.
- Sesame seeds: to sprinkle at the bottom and top of the pie. If you don't like sesame seeds, you can sprinkle breadcrumbs or corn flour.

How To Make
To make a crustless cheese pie, combine the dry and the wet ingredients separately in two bowls.
Next, mix together by gradually adding the dry ingredients into the wet. Use a whisk to do that. Lastly, mix in the crumbled feta cheese. And the batter is ready!
Since it's a no-crust pie, we use plenty of olive oil and sesame seeds to give it a crunchy texture on top and bottom. Add a generous splash of olive oil to the bottom of the pan and then brush it to spread evenly. Then sprinkle plenty of sesame seeds to coat the bottom of the pan. These also help the pie not to stick to the bottom.
Drizzle also the top of the pie batter with olive oil and sesame seeds. And it's ready to be baked!

To make this Crustless Tiropita, I'm using a standard 9 x 13-inch (23 x 33 cm) pan. If you want to use another pan, it should be close to that size so the pie will be thin enough to bake properly.

Crustless Cheese Pie (Tiropita Without Phyllo)

- 150 grams (⅔ cup) Greek yogurt
- 200 ml Buttermilk or sourmilk
- 180 ml water
- 120 ml olive oil + extra for the pan
- 2 large eggs
- 220 grams (2 cups) all-purpose flour
- 100 grams (½ cup + 2 tablespoons) corn flour / maize flour not cornstarch
- 1 tablespoon baking powder
- ⅔ teaspoon salt
- 350 grams (12.3 ounces) feta cheese coarsely crumbled

Instructions
- Preheat oven to 180°C / 355°F.
- Combine dry ingredients in a bowl (flour, corn flour, baking powder, and salt).
- Whisk together eggs and yogurt in a large mixing bowl.
- Add the olive oil, water, and Buttermilk and whisk to combine.
- Mix in the dry ingredients gradually until uniform.
- Stir in the feta cheese.
- Add a good splash of olive oil, and brush to coat the bottom of a 9 x 13-inch pan (23 x 33 cm).
- Sprinkle with sesame seeds enough to coat the bottom surface of the pan.
- Add the cheese pie batter and spread evenly.
- Drizzle with olive oil on top and sprinkle with sesame seeds.
- Bake for 40 to 50 minutes until honey-browned on top.
- Cool for 30 minutes.
- Cut into 12 square pieces and serve!





What can you use instead of corn flour in this recipe? I’m in Australia and cannot find corn flour
Hi Heather, you can substitute corn flour with durum wheat flour (for similar texture and flavor) or use oat flour. Or simply add more all-purpose flour.
