What It Tastes Like
This Greek olive oil honey cake tastes like something between Karydopita (syrupy Greek Walnut Cake) and Melomakarona (Honey-Walnut Semolina Cookies).
Its flavor is warm, earthy, and spiced. Honey, orange, cinnamon, and cloves give this cake its lovely, warm, and natural sweetness. Moreover, olive oil and walnuts add a rich, nutty flavor to every bite.
A little brandy brings extra depth, and a final drizzle of honey makes the top sticky and delicious.
Sprinkle with a handful of ground walnuts for a beautiful Greek-style cake that’s perfect for coffee, afternoon tea, or a simple dessert-snack.

Why You’ll Love This Greek Honey Cake
- Made in one bowl. You don’t need a stand mixer or hand mixer. A simple whisk does the job.
- Full of traditional Greek dessert flavors. Honey, olive oil, orange, cinnamon, cloves, and walnuts make every bite fragrant and delicious.
- Moist and tender. Olive oil and honey help create a soft cake with a lovely texture.
- Easy to customize. Use different nuts, adjust the spices, and add other flavorings. See options below.
Ingredients You’ll Need
- Olive oil: Use a good-quality olive oil for the traditional Greek flavor. A mild or fruity olive oil works especially well.
- Honey: Honey adds sweetness, moisture, and that unmistakable Greek dessert flavor. Thyme or Flower Honey are classic options.
- Brown sugar: It adds a gentle caramel flavor that pairs beautifully with honey and warm spices. Use unprocessed brown sugar, such as Demerara, for a gentler sweetness. You can also use coconut sugar instead of brown sugar.
- Orange juice and orange zest: Orange juice adds freshness and balances the heaviness olive oil brings to the cake's texture. Freshly grated orange zest gives the cake a delicious aroma.
- Cinnamon and cloves: These classic spices give the cake a warm, comforting flavor. Cloves are strong, so a little goes a long way.
- Brandy: I'm using Greek Metaxa. A classic addition to many Greek desserts. It complements the orange and spices.
- Baking soda and baking powder: This combination gives the best leavening results in olive oil-based cakes.
- All-purpose flour: Add it gently and stop mixing as soon as you no longer see dry flour.
- Fine semolina: Use it on the bottom of the pan to prevent the cake from sticking. You can use fine breadcrumbs or all-purpose flour instead.
- Finely ground walnuts: Ground walnuts add a rich flavor and a more tender, crumbly texture throughout the cake. Add some extra walnuts for topping.

Easy Variations
Make it without brandy. Simply use more orange juice instead.
Adjust the spices. Add an extra teaspoon of cinnamon for a warmer flavor. Or skip the cloves for a milder flavor. You can also use nutmeg instead of cloves. You can also use a gingerbread spice mix, which works very well here.
Add different nuts. Use pecans, almonds, or even hazelnuts instead of walnuts in this honey cake.
Add a touch of cocoa. Replace 3 tablespoons of flour with 3 tablespoons of unsweetened cocoa powder.
Add raisins or other dried fruit. Mix in 3-4 tablespoons of red raisins (black currants) at the last step along with the ground nuts. Or use finely chopped dried figs or prunes.

FAQS
Q: Can I make honey walnut cake without brandy?
A: Yes. You can omit the brandy and replace it with orange juice.
Q: Why is my honey walnut cake dense?
A: A dense cake may come from overmixing the flour, using walnuts that were ground into a paste, or using too much flour. Measure the flour carefully and mix the batter gently once you add it.
Q: Can I use chopped walnuts instead of ground walnuts?
A: You can, but the texture will be different. Finely ground walnuts give the cake a more even, tender crumb, while chopped walnuts create more noticeable crunchy pieces.
Q: Does Greek honey walnut cake need to be refrigerated?
Not necessarily. In a cool kitchen, it can stay in an airtight container at room temperature for about 3-4 days. Refrigerate it if your kitchen is warm or you want to keep it for longer.
Q: Can I freeze honey walnut cake?
A: Yes. Wrap it well and freeze it for up to 3 months. You can freeze individual slices, which makes it easy to enjoy a piece whenever you want.
Q: Is Greek honey walnut cake very sweet?
A: It's as sweet as honey! The extra honey topping is optional, so you can leave it off if you prefer a less sweet cake.

TIPS
- Don’t overmix the batter. Once you add the flour, mix only until combined. Too much mixing can make the cake dense.
- Grind the walnuts finely. Finely ground walnuts blend into the batter and give the cake a more even texture. Avoid grinding them for too long, or they’ll start releasing their oils and turn into a paste.
- Taste your olive oil. If your olive oil has a very strong, peppery flavor, it may dominate the cake. Choose a milder one if you prefer a more delicate result.
- Wait a few minutes before adding the topping. Let the cake cool slightly before drizzling on the honey. If it's too hot the steam will lock inside the cake making it spongy.
- Let it rest. This cake tastes lovely on the day you bake it, but it can taste even better the next day as the honey, spices, orange, and walnuts mingle.
Serve With
This old-fashioned honey cake with walnuts pairs best with coffee or tea. Or as a sweet treat during the day. Drizzle it with honey and extra ground walnuts on top.
It's more filling than light to serve after dinner. If you want, top it with Greek yogurt whipped cream, or honey whipped cream to make it more like a dessert than a coffee cake.
