Choose brandy for a deeper, warm flavor. Choose almond liqueur if you want the almond taste to stand out.
You can also leave out the alcohol. And use fresh orange juice.
What Figs Should I Use?

You can use any type of fresh fig you like. The color does not matter. What matters most is the flavor and ripeness.
The figs should feel soft when you gently press them. Avoid figs that are very hard or very dry.

Can I Make This Cake With Dried Figs?
Fresh figs are the best choice for this cake. They become soft and jammy as they bake.
Dried figs have a much stronger and sweeter taste. They also have a different texture. If you want to use them, chop them into small pieces, soak them in the alcohol or orange juice, and mix them into the batter right at the end.
Still, for the classic version, I would choose fresh figs.
Make It Gluten-Free
To make this fig cake gluten-free, simply swap the all-purpose flour with gluten-free all-purpose flour.

To Make It Upside Down
Make it upside down if you want the figs to stay more moist and tender instead of caramelizing on top of the cake.
To make this and upside down fig cake, add 1 tablespoon olive oil to the bottom of the pan and brush to spread. Sprinkle 5 tablespoons brown sugar and then place the sliced figs.
You will need 6-7 figs in this case. Pour the batter on top and bake.
How To Serve Fig and Almond Cake
This cake is great on its own. You do not need much to make it a special dessert. A simple dusting of icing sugar on top makes it look even more special.
Try it with thick Greek yogurt, whipped cream,
vanilla ice cream if you want to serve it like a dessert after a meal.
Greek yogurt is one of my favorite pairings. Its slight tang balances the sweet figs and brown sugar.
For a richer dessert, serve the cake warm with vanilla ice cream. The warm cake and cold ice cream make a great match.
You do not have to serve this as a dessert. Fresh fig cake is a great side treat for coffee or tea.

Fresh Fig Cake with Almonds

Ingredients
- 250 grams (4-5 large) figs
- 150 grams (1½ cups) almond flour + 1½ tablespoons to sprinkle on top
- 125 grams (1 cup) all-purpose flour may use gluten-free all-purpose flour instead
- 2 teaspoons baking powder
- ½ teaspoon salt
- 3 large eggs
- 200 grams (1 cup) brown sugar
- 80 ml (⅓ cup) olive oil
- 1 teaspoon vanilla or almond extract
- 2 tablespoons brandy or scotch, almond liquor, or orange juice for non alcoholic
- icing sugar or honey to serve with
Instructions
- Preheat oven to 170°C / 340°F.
- Whisk together the almond flour, all-purpose flour, baking powder, and salt. Set aside.
- Beat eggs with sugar on high speed using an electric mixer with the whisk attachment on. Beat until thickened and foamy.
- Pour in the olive oil gradually while you continue beating.
- Add the vanilla extract and the flour mixture in batches. Lastly, pour in the cognac.
- Transfer the cake batter to an oiled 9-inch cake pan.
- Dust with the 1½ tablespoons of almond flour on top.
- Slice figs into 3-4 pieces each and place them on top.
- Bake for 45-50 minutes on the lower rack, or until the cake sets and a toothpick inserted in the center of the cake comes out clean. The top of the cake will look a bit moist because of the figs. If the cake gets too much color too soon, drop the oven temperature to 160°C / 320°F.
- Cool the cake to room temperature.
- Dust with icing sugar or drizzle with honey on top.
- Cut into 12 pieces and enjoy!
