Marinating the Pork Chops
To marinate pork chops for air-frying, use a dry marinade. Because too much moisture on the pork chops won't give them a nice roast on top.
First, pat-dry the pork chops with paper towels. Then rub them with a small amount of grape molasses. This will help the dry marinade stick to the pork chops and also give them a nice, caramelized, roasted color.
Make the dry marinade by combining mustard powder, sweet paprika (you can use smoked for a stronger, smoky flavor), granulated garlic, dried thyme, and oregano.
Leave the pork chops to marinate for 30 minutes to 1 hour at room temperature. Or up to 24 hours in the fridge. Make sure to leave the pork chops at room temperature for 30 minutes before cooking them so they won't toughen.

Cut them into fries and place them in a bowl with plenty of water. Allow to soak for at least an hour to release starch. This helps them become more crispy. You can even let them soak overnight in the fridge as long as they're submerged in the water.
Drain them and pat dry well with paper towels or wrap them in a tea towel.
Season with paprika, oregano, olive oil, and a little sea salt. Toss well until evenly coated.
Place the fries in the air fryer basket in an even layer and cook until golden on the outside and softened inside, shaking the basket a couple of times while cooking.

Air-Fryer Pork Chops and Potatoes
Ingredients
- 2 (about 300 grams each) bone-in pork chops 2-2½ cm (¾ to 1-inch) thick
- 600 grams (1.3 pounds) potatoes
- olive oil
- 1 teaspoon dried oregano
- 1 teaspoon sweet paprika
- sea salt and pepper
- lemon wedges to serve with
For The Marinade:
- 2 teaspoons grape molasses or molasses or honey
- 1 teaspoon yellow mustard powder or powder a teaspoon of mustard seeds in a pestle and mortar or seed grinder
- 1 teaspoon dried oregano
- ½ teaspoon thyme
- ½ teaspoon granulated garlic
- ⅔ teaspoon sweet or smoked paprika
Instructions
Prepare The Potatoes:
- Wash the potatoes and rub the skins with a dish sponge or peel them if you prefer.
- Cut the potatoes into 1½ cm (⅔-inch) thick fries.
- Soak them in plenty of water at room temperature for about an hour.
- Drain the potatoes in a strainer. Then pat-dry with paper towels or wrap them in a kitchen towel to absorb excess water. Transfer to a bowl.
- Drizzle the potatoes with olive oil (1-2 tablespoons) and season with salt, pepper, 1 teaspoon oregano, and 1 teaspoon paprika.
Prepare The Porkchops:
- Pat-dry the pork chops.
- Rub half a teaspoon of grape molasses on each side of each pork chop.
- Mix the remaining ingredients of the marinade (mustard powder, oregano, thyme, garlic, paprika) in a bowl and then rub it on each pork chop, on both sides.
- Marinate the pork chops for 30 minutes at room temperature. You can marinate them for up to 24 hours; just take them out of the fridge 30 minutes prior to cooking.
Fry The Potatoes and Pork Chops:
- Preheat the air fryer at 200°C / 400°F for 5 minutes.
- Fry the potatoes for 20 minutes, tossing and flipping 2-3 times. Remove from the air-fryer and set aside. NOTE: The potatoes should have softened with a thick outer skin that's golden and almost crisped when you remove them from the air-frier. Otherwise, cook them for a few minutes longer.
- Drizzle the pork chops lightly with olive oil. Then season with salt and pepper.
- Fry the pork chops for 12-14 minutes, flipping them once. The internal temperature should read 140°F / 60°C on an instant-read thermometer.
- Transfer the pork chops to a plate and rest covered for 5-10 minutes.
- Return the potato fries to the air-fryer and cook for 5-10 minutes until deep-golden with crisp edges.
- Serve the pork chops and potatoes with lemon wedges on the side.
