Greek Scrambled Eggs With Feta Cheese and Potato Fries

- 500 grams (1.1 pounds) potatoes peeled and cut into 1,5 -2 cm thick fries
- 200 grams (7 ounces) feta cheese coarsely crumbled
- 6 large free-range eggs
- olive oil for frying
- coarse sea salt
Break the eggs in a bowl and set aside.
Add the potatoes to a strainer, season with coarse sea salt, and toss to combine. Allow to sit while the oil is heating.
Add about 1 cm of olive oil to a frying pan and heat over medium-high heat. Note: You can use other vegetable oils; however, olive oil gives it a stronger flavor.
Fry the potatoes until golden and crisp on the edges.
In a non-stick frying pan, add the fried potatoes and feta cheese, and cook for a minute over high heat until the cheese starts to melt.
Add the eggs and mix with a wooden spoon, breaking the egg yolks as you go.
Cook until the mixture starts to set. Don't overcook to turn very crumbly, take off the heat while it's still soft and creamy.
Serve warm with freshly ground pepper and dried oregano on top!
