This dish of Greek scrambled eggs comes straight from a village kitchen where it's often served as a quick lunch. It's called Patates Me Avga (potatoes with eggs).
How To Make
To make it, you need just 4 ingredients: free-range eggs, potatoes, feta cheese, and olive oil. You cut the potatoes into thick fries so they keep soft and meaty on the inside while their edges turn crisp and golden as they fry in hot olive oil.
Then mix them with crumbled feta cheese and cracked eggs in a non-stick pan until well combined and set.

Frying Potatoes In Olive Oil
Ever fried potatoes in olive oil? They are so flavorful! That's how Greek grandmas used to make potato fries, by cutting them thick and chunky, and then frying them in hot olive oil.
You don't need to add a lot of olive oil to the pan. Just enough to almost coat the potatoes. For a standard-sized frying pan, you need to pour enough olive oil to rise about 1 cm up the sides of the pan. And of course, it doesn't have to be extra virgin olive oil.

Extra Ingredients
Sautéed onions taste great in these scrambled eggs with potatoes (just like in this Feta and Onion Omelette). To add, saute the onions, then add the fried potatoes, feta cheese, and lastly the eggs.
Small bits of browned Greek sausage, bacon, ham, or portobello mushrooms will give it a more wintry depth of flavor. Moreover, thin slices of sun-dried tomatoes preserved in oil will give these scrambled eggs more of a sunny Mediterranean vibe.

Greek Scrambled Eggs With Feta Cheese and Potato Fries
Ingredients
- 500 grams (1.1 pounds) potatoes peeled and cut into 1,5 -2 cm thick fries
- 200 grams (7 ounces) feta cheese coarsely crumbled
- 6 large free-range eggs
- olive oil for frying
- coarse sea salt
To Serve With:
- dried oregano
- freshly ground pepper
Instructions
- Break the eggs in a bowl and set aside.
- Add the potatoes to a strainer, season with coarse sea salt, and toss to combine. Allow to sit while the oil is heating.
- Add about 1 cm of olive oil to a frying pan and heat over medium-high heat. Note: You can use other vegetable oils; however, olive oil gives it a stronger flavor.
- Fry the potatoes until golden and crisp on the edges.
- In a non-stick frying pan, add the fried potatoes and feta cheese, and cook for a minute over high heat until the cheese starts to melt.
- Add the eggs and mix with a wooden spoon, breaking the egg yolks as you go.
- Cook until the mixture starts to set. Don't overcook to turn very crumbly, take off the heat while it's still soft and creamy.
- Serve warm with freshly ground pepper and dried oregano on top!
