This Easy strawberry sauce is a personal favorite topping for Greek yogurt. It's fresh, healthy, and not too sweet. Made with honey, no refined sugar, and without needing to cook the strawberries!
No-Cook Strawberry Sauce
This raw strawberry sauce is made without cooking the strawberries. All you need is a small food processor or a blender. Pulse the strawberries into a puree or leave them a bit chunky (your call) along with honey, a small amount of lemon juice, lemon zest, and a pinch of salt.
How To Thicken A No-Cook Sauce
To thicken a no-cook strawberry sauce all you need is chia seeds! These little seeds absorb moisture and become gelatinous (for those not already familiar). So all you have to do is mix a small amount of chia seeds into the blended sauce and leave it in the fridge for a couple of hours to thicken. It takes about 4 hours. But it's even better if you make it the day before and leave it in the fridge overnight.
Chia seeds will also add a nutritional boost as they are high in omega-3 fatty acids, fiber, and protein. For this amount of sauce, I am using just a teaspoon of chia seeds. This way they go unnoticed like they're the strawberry seeds. But you can use up to 2 teaspoons if you prefer a thicker texture and don't mind the seeds.
Serve It With
As I said, my favorite way of enjoying this sauce is as a topping to Greek yogurt. They're the perfect match! But you can also use it on top of pancakes (you may try these healthy Greek yogurt ones), over crepes, on top of a cheesecake, frozen yogurt, or even vanilla ice cream.
Storing
You can keep this sauce in a glass jar for up to 4-5 days in the fridge. You can also make a batch and freeze it for up to 3 months.
Recipe
Easy Strawberry Sauce (no cook, sugar-free)
Ingredients
- 200 grams (7 ounce) fresh strawberries
- 100 grams (3.5 ounce) honey
- ½ teaspoon lemon juice
- a pinch lemon zest
- 2 teaspoons chia seeds
- pinch of salt
Instructions
- Blend strawberries in a small food processor or blender together with the lemon juice, zest, and pinch of salt. You don't need to pulse until smooth you can leave it a bit chunky if you like.
- Transfer the sauce to a clean glass jar.
- Stir in the honey.
- Stir in the chia seeds very well.
- Refrigerate for at least 4 hours stirring 1-2 times during the first hour so the chia seeds won't get lumpy.
- Serve over Greek yogurt, ice cream, frozen yogurt, on cakes, scones, etc.
