This Mediterranean-style Sausage and Potato Casserole is easy to make and very flavorful. If you're looking for a delicious and simple casserole dinner here it is!

The juicy vegetables make these baked sausages with potatoes taste so good. Yes, this sausage bake is loaded with tomatoes, onions, and peppers. All the pizza flavors minus the cheese, (unless you want to toss a few pieces of Mozzarella together with sausages) are in this oven-baked sausage recipe.

Type Of Sausage
I'm using Greek sausages (Loukaniko) in this recipe. They're made of pork and have strong flavors of garlic, oregano, and most of the time leeks. Italian sausages are very similar.
You may, in fact, use any other good-quality pork sausage you like. I can't say I'm really a fan of beef sausages. But if you prefer, then you can use them for this recipe.

How To Make
To make sausage and potatoes in the oven: Mix the potatoes with the vegetables, seasonings, olive oil, and water or stock. Toss them into a baking dish, and bake covered until the potatoes are completely soft when you prick them with a knife.
TIP: You can let the potatoes bake until they absorb all the water if you don't want the dish to be too saucy.
Once the potatoes are cooked, add the sausages and bake uncovered until they get nicely roasted.

Cooking Sausage In The Oven:
A rule of thumb is to bake sausages for 15 to 20 minutes. 25 minutes tops! This depends on how juicy you want the sausages but also the temperature and how strong is your oven.
I like sausages to drain out their fat a bit (Greek pork sausages have a lot), that's why I either poke holes with a toothpick or scar them on top and bottom with a knife. This also prevents them from cracking open and exploding.
I also like to roast sausages in the oven so I let them bake without turning them. If you don't want roasted skins, flip them halfway through baking.

Tips
- To give this dish a stronger flavor, you can roast the vegetables (except the potatoes) and then bake them together with the potatoes.
- Or you can sautee the vegetables on the stovetop first. You can also pan-fry the potatoes until golden (no need to cook and soften) and then bake them in the oven.
- Make it spicy! Add some cayenne pepper, Tobasco sauce, or hot red pepper flakes, it goes so well with this dish.
- I am using sweet paprika but if you want to enhance the smokey flavor of the sausages, use smoked paprika.
- If tomatoes aren't in season, it's better to use cherry tomatoes or canned whole tomatoes and chop them coarsely.

Sausage and Potato Casserole with Peppers, Tomatoes, and Onions
Ingredients
- 600 grams (1.3 pounds) pork sausages
- 850 grams (1.8 pounds) potatoes you can peel or leave the skin on
- 550 grams (3 medium-large) tomatoes
- 200 grams (1½ medium-sized) green bell pepper
- 170 grams (1 large) onion
- 1 teaspoon mild mustard
- 4 teaspoons olive oil
- 2 teaspoons dried oregano
- 1 tablespoon lemon juice
- 1 teaspoon sweet paprika
- ¾ cup water or stock
Instructions
- Preheat oven to 200°C 390°F.
- Whisk together the mustard, olive oil, oregano, paprika, some salt, and pepper in a large mixing bowl.
- Prepare the vegetables. Cut all vegetables into small bite-sized pieces, about 2 cm (¾-inch) thick. Cut the potatoes a bit bigger, about 2½ cm (1 inch) thick.
- Toss all vegetables into the bowl and mix well.
- Transfer to a baking/casserole dish.
- Pour in ¾ cup water or stock from the side (don't rinse the vegetables).
- Cover and bake for about 1 hour. Run a knife through the potatoes to ensure they're cooked. You can let them cook until completely soft and mellow. Or even uncover the dish and give them a light roast before adding the sausages.
- Add the sausages. Prick sausages with a toothpick or use a knife to scar the top and bottom. Uncover the dish and place the sausages on top of the potatoes.
- Bake (uncovered) for 15 to 20 minutes more. You can flip the sausages once halfway through or leave them to roast well on top while juicy underneath. Turn the oven off.
- Let the food rest in the warm oven with the door open for at least 20-30 minutes so the potatoes soak the delicious juices.
- Serve and enjoy!
